Oso Libre grass fed Black Angus Beef is available exclusively for our wine club members. It's official, we are now approved and able to sell our Angus beef ! Individual steaks are now for sale in the tasting room and on-line here. You can now enjoy a bottle of wine and a steak which were both grown on the same ranch.
We have 60 acres available for our Angus which limits our annual beef herd to 30 head. This means we can only process 6 to 10 animals per year.
These stress free animals are home grown on pasture grasses that include a variety of protein rich forages. We then pasture finish the yearlings for 60 days on a ration of marbling producing grass, alfalfa and sweet molasses. The beef is then dry aged for at least 30 days. Our Angus cattle are not given any hormones or growth stimulating antibiotics. Each vacuum-sealed, individually wrapped steak is now tender, well marbled, lean and frozen at zero degrees Fahrenheit. Often a glass of red wine, New York steak, sharp knife, fork, napkin and plate is all the tools we need to fix the problem!

The contents of these packages are subject to availability as supply is very limited. Each Spring, we will offer new packages and cuts, so check back on a regular basis if the particular cut you want is not available.

The feedback about the quality of our Pasture Raised Estate Beef has been tremendous and the success of the program further enables our 'whole farm', sustainable family business. Our 60 acres of Pasture allow us to harvest only 8 steers per year so the package cuts are designed to be equal for each beef club member.
Oso Libre beef is raised with exacting standards: no Hormones, no Feedlot and no Stress. Our steers are grass fed in open pastures and in our vineyards enjoying free-range grasses, legumes and water from flowing creeks. The secret to our beef is that it is not just grass fed. We take the extra steps with a 4-way finishing regimen by feeding with wheat, oats, barley and molasses for 75 to 90 days. The beef is then aged 18 to 21 days before harvest. Our butcher tells us that the quality of our beef exceeds the USDA Prime requirements and we are extremely proud of it.
We’ve revised our beef club to be more enjoyable and diverse in its contents. It has everything for the beef lover. The Beef Club Packages for 2012/2013 are a major improvement from last year (our first year). Our new butcher is a meticulous beef artist and the resulting packaged cuts quality is remarkable. Each member will receive 1 package, which is roughly 15 pounds. If you would like more beef, you can place a request to receive a double box order (subject to availability).
Each package will contain approximately 5 pounds from the Restaurant Cuts with a guarantee of 2 each of the Tier One Filet Mignon, Bone in Rib Eye steak or New York steaks, 5 pounds from the Fiesta Cuts and 5 pounds from the Family Cuts. Please review the table below to understand the breakdown of available cuts.
Each 15 lb. package will cost $240.00 plus $25.00 for the insulated box and shipping costs. For a two box order (30 lbs.) cost is $390.00 plus $40.00 (a $50.00 savings). In the package, you will receive a list and invoice of the actual contents and weight. You will also find a cooking guide for your convenience and enjoyment.
Shipping box is recyclable and will save 12.00 each time it is reused. For pick-up orders you may bring a cold ice chest or we can pack for you in our insulated box for 12.00.
